Chicken Jalfrezi

This is an authentic Indian Chicken Curry using the Curry Tree Spice Mixes.
2 packets of Curry Tree Jalfrezi Spice Mix
400 ml of water
6 tablespoons of plain yoghurt
1 tablespoon of butter
750 grams of chicken breast sliced into strips
1 capsicum cut into strips
2 onions thinly sliced
100 grams of cream (optional)

Simmering time on the stove top: 5 minutes

Thermal Cooking time: 1 hour minimum

1. Saute the onions and capsicum in 1/2 the butter in the Shuttle Chef inner saucepan over med-low heat until the onion starts to become translucent. Remove and place to one side.
2. Whisk the Jalfrezi Spice Mix with water and yoghurt in a bowl to form a smooth paste.
3. Saute the chicken strips in the remaining butter in the inner saucepan over a med heat until golden brown. (this may need to done in batches)
4. Add the Spice Mix and bring the mixture to the boil, whilst stirring.
5. Add in the onion and capsicum and simmer gently for 5 minutes.
6. Transfer the saucepan into the outer container and close the lid, leaving this for a minimum of 1 hour.
7. If using the cream, stir this in just before serving.
8. Serve with Basmatti rice or Chappatis.
