Steamed Fish

This meal is so quick and is deliciously healthy.
Light and definately good for you.

500 grams of firm flesh fish fillets
2 tablespoons of soy sauce
2 teaspoons of sesame oil
Salt and pepper to taste
1/2 a cup of finely sliced shallots

You could replace the soy sauce and sesame oil with lemon juice or use any of your choice of marinades.

Simmering time on the stove top: 3 minutes

Thermal Cooking time: 1/2 and hour minimum

1. Cut a round of baking paper to line the base of the stainless steel steamer insert.
2. Lay the pieces of fish on the baking paper.
3. Baste the fish with the soy sauce, sesame oil, salt and pepper.
4. Sprinkle with the sliced shallots.
5. Fill the inner saucepan with enough boiling water so that it is not quite in contact with the base of the steamer.
6. Place the steamer inside the inner saucepan.
7. Steam over simmering water with the lid on for 3 minutes.
8. Turn off the heat and transfer the inner saucepan into the vacuum insulated outer container.
9. Close the lid and leave for a minimum of 1/2 an hour.
10. Serve on a bed of rice or a freshly tossed green salad of your choice.
